Vanessa's Harlequin Pudding

Vanessa's Harlequin Pudding For 3 to 4 people you need: About 2 tablespoons of sultanas 50g of butter 1/4 cup of sugar 1 egg 3/4 cup of flour 2 tablespoons of custard powder 1 teaspoon baking powder 5 tablespoons milk 1 tablespoon cocoa This steamed pudding is half brown and half yellow.Remember to use level spoons when you measure everything. Grease a medium sized bowl.Sprinkle the sultanas over the bottom of it.In a small saucepan melt the butter.Remove from the heat, add the sugar and the egg and beat with a fork until mixed. Sift the flour,custard powder and baking powder on top of this.Add four of the five tablespoons of milk, then mix again until combined.Spoon half of this on top of the sultanas. Sprinkle the cocoa and then the remaining milk over the rest.Mix in,then spoon over the yellow layer. Stand the uncovered pudding bowl on a piece of of crumpled foil in a large saucepan with hot water coming halfway up the bowl.Cover the pot and simmer for 45 minutes or until the pudding feels firm in the middle. Variation: You can divide the mixture between three cups instead of one bowl if you like.The cup sized puddings will cook in about 30 minutes. |
